In the lush highlands of San Cristobal, Cobán, Alta Verapaz, Guatemala, lies the esteemed Finca Santa Isabel, where grower Luis “Wicho” Valdés has dedicated his life to cultivating some of the finest coffees in the world. Nestled at an altitude of 1400 to 1500 meters above sea level, the farm thrives on clay loam soil, providing an ideal environment for the coffee varieties Bourbon, Catuaí, Caturra, Obata, and Sarchimor. The combination of high altitude and rich soil imparts unique characteristics to the beans, resulting in a coffee that is both complex and refined.

From November to April, the harvest season at Finca Santa Isabel is a period of intense activity and meticulous care. The fully washed process is employed to ensure the highest quality, with cherries carefully selected, pulped, fermented, and then dried in the sun. This method preserves the coffee’s inherent flavors, resulting in a clean and vibrant cup.
