What can consumers tell us about craft chocolate?

Craft chocolate is a relatively new and fast-growing segment of the American chocolate market. To understand American premium chocolate consumer perception of craft chocolate and desirable chocolate product attributes, Dr. Allison Brown conducted a mixed-methods study using focus groups and projective mapping. In this talk, she will discuss the findings in the context of a Desirable Chocolate Attribute Concept Map.

About the Speaker

Alison Brown, PhD
Penn State University

Allison Brown is a PhD candidate at Penn State pursuing a dual-title degree in Food Science and International Agriculture and Development. She earned a BS in Food Science from the University of Illinois Urbana-Champaign and an Accelerated Culinary Arts Certificate from the Culinary Institute of America at Greystone. After working in the wine industry, her interests shifted to chocolate and she received her MS in Food Technology at Wageningen University. Over the past eight years, her research agenda has involved work in chemical, physical, and sensory analysis as well as qualitative work on stakeholder perception of cacao and chocolate products.
